Easy 2011 Super Bowl Chicken Wing Recipes:


Orange Soy Chicken Wings


1 cup sweet orange marmalade
1⁄2 cup honey
1⁄3 cup lite soy sauce
11⁄2 Tbsp rice wine vinegar or cider vinegar
3 Tbsp grated fresh ginger
1 Tbsp minced garlic
1 tsp crushed red pepper
3 lb chicken wings, cut in half at center joint
Sliced scallions and orange wedges
Whisk first 7 ingredients together in a medium bowl to blend. Scrape half of mixture into a ziptop bag. Add wings; turn to coat. Refrigerate at least 2 hours, turning bag occasionally. Cover and refrigerate remaining sauce mixture.


Heat oven to 450°F. Line 2 baking sheets with foil. Put a wire rack in each pan; coat with nonstick spray. Place wings in a single layer on racks (discard bag and contents). Bake 20 minutes, turning once. Brush with some of the reserved Marinade/Glaze. Bake an additional 10 minutes, turning once and brushing again, until wings are lightly browned.Use reserved refrigerated marinade as dipping sauce.

Margarita Chicken Wings: Super Bowl Recipe


Ingredients


10  chicken wings (about 2 lbs.)
Margarita Marinade
Lime wedges
Preparation


1. Rinse wings, pat dry, and cut apart at joints. Put in a resealable plastic bag with marinade. Seal and refrigerate, turning occasionally, at least 3 hours and up to overnight. Remove wings; reserve marinade.


2. Preheat oven to 500°. Line a large baking pan with aluminum foil and coat lightly with oil. Arrange wings skin side up and brush with reserved marinade.

3. Bake wings until golden brown, about 10 minutes. Turn over, brush with marinade, and bake another 5 to 6 minutes. Turn once more, brush with marinade, and bake until skin is brown and glossy, 2 to 4 minutes. Serve warm, with lime wedges.
